For those of you who follow me and my wife on Facebook, you've probably already seen the photos she posted of me making my spiced pecans in advance for Thanksgiving. Considering that I'm on call this year, it's going to be a rough day; I think I'll have to start my rounds at midnight, so that I'll be available for all the set-up madness that we must do.

Anyway, the pecans are drying; tonight I deep fry them. Then they'll be packed up and wait for the holiday. One year, they were left on the counter and brushette had corveys knock them down and she ate all two pounds of them! I had to completely redo the batch so as not to disappoint the guests. It took a while to exercise the fat off that beagle that time!
