Yesterday, before leaving for work, I finished reading a book that Anthony Bourdain had recommended in his books, due to the description of what it was like to work in a restaurant in Paris in the early 20th century. Written by George Orwell, it's called Down and Out in Paris and London; the first half includes the restaurant scenes, the latter half covered life as a tramp in England. Orwell does a good job giving a clear idea of what it all was like.
